Never mind teflon, Le Creuset has a wonderfully inert porcelain coating on heavy cast iron. So this pot heats up, holds the heat on low, and the food, with proper amounts of oil, doesn't stick. Cleanup is very easy. A few gotchas: no high heat (ruins the porcelain), no abrasives to clean (ditto) and it is best to warm the pot a bit before putting in the oil as it then fills the micro-sized pores of the coating. And if you leave it on too high, the food will catch on the bottom and burn, of course.I use this for pot roasts (as I write this, one is cooking right now), for stews and soups. It's my favorite pot and it just sits out on the stove in all its red glory because chances are, that's the one I am going to use to make a meal.
