   I've always enjoyed cooking and an 8" Sabatier high-carbon steel chef's knife has been my favorite for many years. It takes a superb edge but will discolor and even rust if not properly cared for which is just the nature of high-carbon steel. With all the fuss being made over Santoku knives I just had to give one a try. Given the price and the reputation of the manufacturer, the Cuisinart version seemed like a good buy. It's only been about a week since I bought it, but this Santoku might just replace my Sabatier as the first knife that I grab. Its perfectly balanced (as is the Sabatier) but starchy food (potatoes, green plantains)just don't stick to it. I also like the fact that it's not prone to discoloration or rust. I haven't had a need to hone or steel it yet so I don't know how long the edge will last. One thing is for sure....this puppy is sharp! If you like to work in the kitchen or are just looking for a good knife, think about a Santoku. No reason to spend $75-100 either as this Cuisinart certainly does the job.

   I have the 5 and 7 inch Cuisinart Santoku knife. They are GREAT and stay sharp.
