The air bake construction lets you bake cookies evenly and consistently. Even if you are not much of a baker, you won't have to worry about burning the bottoms when you are not sure whether or not you need an extra minute. When cookies look ready on top, the bottoms will be fine too. This is as non-stick as a silicone baking sheet, since the bottoms of your cookies don't burn. I can't say whether this is the ideal sheet for all styles of cookies, but it's worth having among your bake ware even if you need something else for certain specialty cookies.The only down side is that these are potentially more fragile than traditional baking sheets. You can't expect to soak these in the sink or throw a large pot on top of them without expecting damage. It's the perfect thing for my young teenage girls to bake with, but a terrible thing to keep around my pre-teen son. Under normal circumstances with reasonable care, none of this should be an issue. They even stand up to automatic dishwashers. (The cookie sheets, not my children.)
